Tot Sauce Chicken Tacos
Healthy, delicious tacos without the spice? Sounds like a winner to us.
Ingredients
2 pounds boneless, skinless chicken breast
2 tbsp vegetable oil
Salt and pepper, to taste
One 14.5oz can diced tomatoes
1/4 cup Tot Sauce
2 tbsp paprika
2 tsp cumin
1 tsp oregano
1 tsp ancho or other chile powder (optional)
12 taco shells
Optional Toppings
Diced lettuce
Diced jalapenos
Red onion
Sour cream
Cheese
Any Quarantine Project hot sauce!
Instructions
Preheat oven to 325.
Pound chicken flat, dust each side with salt and pepper.
Heat oil in a large stock pot over medium high, add chicken.
Cook until both sides are browned, remove chicken to a cutting board.
Pour tomatoes, hot sauce, and all spice into pan, bring to a simmer over medium.
Dice chicken and add to pan.
Cook chicken and tomatoes over medium until most of the liquid has evaporated (about 15 minutes)
Put taco shells in oven on a baking sheet, remove after 6 minutes.
Spoon chicken into taco shells, top with your favorite toppings!
