Sun Of A Breakfast Sandwich

The bright flavor of Sun Of A perfectly complements the savory proteins in this scrumptious breakfast sandwich!

Ingredients

  • 4 oz roast beef

  • 3 large eggs

  • 1 tsp butter, softened

  • 2 ciabatta rolls, split

  • 2 slices provolone cheese

  • Sun Of A to taste

  • Everything bagel seasoning (optional)

Instructions

  1. Beat eggs thoroughly, mix in softened butter, and beat again. Let set for 10 minutes.

  2. Spray two skillets with non-stick spray, and heat over medium until warm.

  3. Toast ciabatta rolls and set aside.

  4. Sauté roast beef in one skillet until browned and slightly crispy, put half on each ciabatta roll. Top each with a slice of provolone.

  5. Scramble eggs slowly, folding constantly. When they are almost entirely cooked, with just a bit still liquid, form them into one large pile, cover, and remove from the burner. Let them sit for a minute. Cut the pile in two, and place half on each sandwich.

  6. Top with a healthy dose of Sun Of A, and a sprinkle of Everything Seasoning, if desired.

  7. Serve with hashbrowns or fruit.

Recipe Notes

  1. This recipe works best with beef, and is especially good with chopped steak, but any breakfast meat will do.

  2. Try them with Trader Joe’s Everything Ciabatta Rolls!
